Crazy Sexy Bean Chili
Today has been a pretty great day.  I ran my first 5k.  Recently, I started running on the treadmill.  I had gone on a trip, and put on a pair of my jeans after a summer of wearing elastic waist skirts.  My jeans were tight!  I was bummed.  So I vowed when I got home from my trip I would start exercising like I meant it!  I usually run for 30 minutes a day, and then do some kind of exercise DVD.  Nothing too hardcore, but enough to make a difference on my waist line.

The city I live in has a marathon, 1/2 marathon and a 5k once a year.  So yesterday I decided last minute to sign up. I figured maybe I could handle it since I have been working out.  My teenage son to my surprise said he wanted to run with me which I thought was awesome.  So this morning we got up and went for it.

It was such a cool experience from start to finish.  The coming together of the community was really beautiful.  Everyone was so excited.  People were visiting with strangers they were positioned around before the race, as if we were all old friends.  All the runners were there to challenge themselves and have a great time.  The vibe of the folks standing along side the race route cheering the runners on felt amazing.  The whole experience kind of reminded me of the enthusiasm people have for Crazy Sexy Kitchen.  So many people all coming together to support Kris Carr and the healthy lifestyle she lives and promotes.

Tonight for dinner we had Crazy Sexy Bean Chili.  I love chili, and was so jazzed to try out this recipe. We made ours with seitan. ( By the way that name just throws me off every time I say it.  I mean who thought of it?  Am I pronouncing it right? I guess it is a matter of emphasing the "an".) You could also use mushrooms to give it that meaty taste as Crazy Sexy Kitchen suggests.  I know some people like to stay away from soy products.  Here are the ingredients I used:
I know the recipe calls for cumin seeds which I used, but I think if you only have cumin powder on hand that would be fine.  This chili was soooooo yummy.  Seriously great!  The recipe makes enough that you will have leftovers for another nights meal.  My kids really liked this recipe too!  It is always a bonus when the whole family likes what you have prepared.
I would absolutely make this recipe again and again.  Loved it!

  1. So glad you are doing this. I got my book this weekend and will be trying many of the recipes too and I will follow along with your cooking from the book. I am a mostly vegan Pastry Chef. My profession pays the bills and allows me to be creative and artistic in my work. My desserts are not vegan. I do plan to experiment more with Vegan desserts but I am busy and don't take the time. I already make a vegan chili but will have to try CSK too. Happy cooking! Pam
